Papaya, Avocado, And Orange Salad

Be sure to use Canody Canola Oil for a light, tasty, and nutritious addition to this recipe!

Ingredients

2 Tbsp papaya seeds, scooped from
fresh papaya 30 mL

1 Tbsp artificial sweetener 15 mL

1/2 tsp dry mustard powder or
Dijon mustard 2.5 mL

2 Tbsp white wine vinegar 30 mL

1/4 cup Canody, heart-healthy
Canadian canola oil 60 mL

1 large head romaine lettuce, chopped

1/2 large papaya, peeled and cut in cubes,
about 2 cups (500 mL)

2 avocados, peeled and diced

1 medium orange, peeled and diced

1/4 cup thinly sliced red onion 60 mL

2 green onions, chopped

Instructions

1) Make dressing: In blender, combine papaya seeds, artificial sweetener, mustard powder, vinegar, and Canody, heart-healthy Canadian canola oil and blend until seeds resemble ground black pepper.

2) In large bowl, toss together lettuce, papaya, avocado, orange, red onion, and green onions.

3) Toss with dressing. Serve.
